Japanese screen violence divides into three schools, and once you can name them the whole category becomes legible. Fukasaku films it as chaos: handheld, ugly, nobody in control. Kitano films it as flatness: a static camera, no music, an action that is over before the shot registers it happened. Miike films it as excess, pushed until it becomes absurd and you are not sure whether laughing is allowed.
This list is sorted by that, not by body count. Nine entries, seven live-action films and two animated. A content warning applies across the board, and I have flagged the specific issues in each section. US streaming info is included with each.

This is the hardest list on the site to actually watch in the US. Seven of the nine are rental only, which is the standard situation for Japanese films distributed by specialist labels.
1. Battles Without Honor & Humanity

This is the founding document of the chaos school. The camera is handheld to the point of instability, the editing cuts on movement rather than on sense, and every death gets a freeze frame with a name and a date over it like a casualty report. You are not supposed to enjoy any of it.
Fukasaku made it in 1973 specifically to destroy the noble-gangster genre the industry had been producing, and the target of the anger is the older generation: every senior figure in this film is lying to young men about honour while using them. That is the argument, and it is drawn directly from his own adolescence.

2. Violent Cop

A detective who solves problems by hitting people is investigating a drug operation that runs through his own department.
Kitano took over as director days before shooting and rewrote the film into something the studio had not commissioned.

This is where the Kitano method arrives fully formed in 1989. The camera does not move. There is no music under the violence. An act of extreme brutality happens at the edge of a wide shot, quickly, and then the scene continues as though the film has not noticed. The effect is that you keep flinching a second late.
He came from stand-up, which is the part people miss. The timing of a Kitano beating is comic timing: setup, pause, punchline, except the punchline is a man being hit with a stool. His long static shots of nothing are the same instinct as a comedian holding a silence too long.

3. 3-4x October

A hopeless amateur baseball player working at a petrol station offends a yakuza, and travels to Okinawa to buy a gun.
There he attaches himself to a man played by Kitano who is considerably worse than the people he is running from.

The second Kitano film and the strangest thing here. Enormous stretches are people standing around not talking, filmed in flat daylight, and then something appalling happens with no warning and the film returns to standing around. The rhythm is the whole point.
It is also very funny in a way that makes people uncomfortable, and there is a mid-film sequence involving a beach that is one of the most disturbing things he has directed. This is the entry to skip if you want a conventional film. It is the one to watch if the flat school interests you as a method.

4. Brother

A yakuza forced out of Tokyo after his family loses a war flies to Los Angeles to find his half-brother, who is dealing drugs on a small scale.
He starts organising the operation the way he knows how.

This is Kitano testing whether his method survives translation, and the answer is roughly half. The Japanese scenes are perfectly controlled; the Los Angeles material is stiffer, partly because the American cast is working in a register they have no reference for.
What makes it worth watching is the loneliness. Yamamoto cannot speak English, cannot explain the rules he is living by, and expands the business because expansion is the only thing he knows how to do. It is the most explicitly sad film Kitano has made about the yakuza, and the ending is a small kindness that costs everything.

5. Dead-or-Alive

Released in English as Dead or Alive. A Chinese-Japanese gang and a detective collide over control of Shinjuku, and the first six minutes contain more incident than most films manage in two hours.
The last two minutes abandon the genre, the physics, and any pretence of being the same film.

Miike is the excess school and this is his manifesto. The opening montage is a rapid-fire assault of drugs, killing and appetite scored to punk, and the closing sequence is so absurd that audiences here laughed in shock at the premiere. Whether that ending is brilliant or contemptuous is a genuine argument.
Content warning without qualification: this contains sexual violence and animal cruelty imagery, and Miike is not interested in your comfort. I include it because his influence on international genre cinema is enormous and because the transgression is the argument. If that sounds like a reason not to watch, trust that instinct.

6. Ichi the Killer

How the Violence Is Filmed
This was cut in several countries and refused classification outright in others, and the reputation is earned. What is worth knowing before you start is that the cruelty is aimed at the audience as much as the characters. Miike keeps offering the pleasures of a revenge film and then making them unpleasant to accept.
Tadanobu Asano's performance is the reason it survives as more than a shock artefact. Kakihara is genuinely funny for long stretches, courteous, almost delicate, and the film uses that charm to implicate you. If you are on the fence, you are probably right to be.

Fukasaku again, twenty-seven years later, at seventy. The violence is chaotic in the same way but the target has changed: this is about adults deciding that the younger generation has become a problem to be solved, which was a live political conversation in Japan in 2000.
The reason it is genuinely upsetting rather than exciting is that the children behave like children. They try to negotiate, form alliances based on who sat near whom, panic, and misread each other fatally. There is no protagonist competence fantasy. Content warning for extended violence involving teenagers, and it is rental only in the US.

How the Violence Is Filmed
The violence here is domestic and almost entirely off-centre. Sounds through a wall, a bruise the next morning, a woman deciding what is survivable. Seiji Tanaka films the river and the fish and the heat with more attention than he gives the beatings, which makes the whole town feel implicated.
It belongs on this page because it is about inheritance rather than spectacle. The question the film asks is whether a boy who can see exactly what his father is can avoid becoming it, and it declines to answer reassuringly. Masaki Suda is very good and very young in it.

9. Jin-Roh: The Wolf Brigade

In an alternate postwar Japan, an armoured police unit fights an urban insurgency. An officer hesitates to shoot a teenage courier and watches her detonate herself.
He then meets her sister. Little Red Riding Hood is read aloud several times.

This belongs to none of the three schools, which is why it is here. The violence is almost entirely withheld until a final sequence, and when it arrives it is procedural, well-lit and unbearable. The film has spent ninety minutes making sure you know exactly what is about to happen.
Oshii wrote it as a study of a man who has agreed to be an instrument, and the animation is realist to a ruinous degree: real weapons, real Tokyo geography, weight in every step of the armour. It is on Crunchyroll, and it is the best-made thing on this page.

A Japanese studio making an American prohibition drama with no Japanese characters, which produces a peculiar and effective distance. The violence is sparse and always consequential, the plotting is tight, and the series is unusually disciplined about not letting revenge feel good.
The reason it belongs on this list is the ending, which asks what a person is for once the plan is complete. Rental only in the US and largely forgotten, which is a shame for a twelve-episode series with no wasted material.

Final Thoughts
The reason this category exists as a category is postwar. Fukasaku was fifteen when the war ended, working in a munitions factory that was bombed, and he has described having to pull bodies apart afterwards. Kitano came out of stand-up comedy and brought its timing to killing. Both of them were reacting against a domestic film industry that had spent two decades making gangsters noble.
For a first watch, Outrage is the most accessible and the funniest, though the humour is very dry. Violent Cop is the purest statement of the Kitano method and it was his first film as director, which is remarkable. Battles Without Honor is the historically important one and the hardest to follow, because the cast is enormous and everybody betrays everybody.
One honest caveat about the two animated entries. Jin-Roh and 91 Days are not violent in the way the live-action films are; they are restrained, and their violence is mostly a single decisive act each. I have included them because they answer the same question the Kitano films ask, which is what happens to a person who has agreed to do this for an institution.
